Chewy Ginger Cookies
To bake these cookies you will need the following:
- 3/4 cup of butter
- 1 cup of brown sugar
- 1 egg
- 1/4 cup of molasses
- 2 cups of unbleached flour
- 1 teaspoon of baking soda
- 1 teaspoon of cinnamon
- 1 teaspoon of ginger
- 1/2 teaspoon of cloves
- 1/2 teaspoon of salt
Beat butter and sugar until creamy. Add egg and molasses and beat until well mixed. Combine all your dry ingredients in one bowl, stir together well and add to wet ingredients until well combined. Chill dough overnight or at least until you are able to handle it without dough sticking to your hands. Roll into 1″ balls. Roll balls in white sugar, place on parchment lined baking sheet and bake at 375° until cracks form on top of cookie, about 8 to 10 minutes. Remove from oven, let sit on baking sheet for a few minutes before moving to cooling rack.
